All dishes are freshly prepared from first-class local ingredients, just the way your grandmother would prepare them. Sapori di Spirito Santo consists of breakfast and dinner. A varied breakfast full of local, autochthonous ingredients for hotel guests is offered on a buffet table with dishes made to order that guests can additionally order.

Hotel Spirito Santo prides itself on sourcing only the finest ingredients for our breakfast and Sapori di Spirito Santo restaurant, all carefully chosen from local suppliers. The fruits and vegetables available in our climate are procured from the local market in Rovinj, ensuring freshness and supporting the local community. For our dairy products, we have partnered with Latus dairy, a small family business located in the heart of Istria. The irresistible aromas and flavors of the Istrian prosciutto that we serve are courtesy of Prosciutto residence Jelenic, another esteemed establishment situated in the heart of Istria, specifically in Sv. Peter in the Woods. Additionally, the other cured meat products featured in our hotel are sourced from the small family business Buretic Bregi, situated on the slopes of the Učka mountain. Our pasta is lovingly crafted by a local entrepreneur, who established the small business Pasta Mia Zia in our beautiful hometown of Rovinj. We are committed to supporting and promoting smaller local producers in every aspect of our operations.

The olive grove of Hotel Spirito Santo is situated in close proximity to Rovinj, on the fertile and esteemed Istrian land. Spanning across approximately 30 olive trees, our grove is meticulously tended to ensure the utmost quality of our olives. Each fruit is delicately hand-harvested, minimizing any potential damage and preserving the integrity of the oil. Our olive oil is derived directly from the olive fruit through the process of cold pressing, a method renowned for its ability to produce the purest and highest-quality oil. This strictly mechanical procedure ensures that no chemical or biochemical interventions are employed, resulting in a completely natural product of exceptional caliber. We take great pride in presenting our esteemed guests with the opportunity to savor the excellence of our EX extra virgin olive oil. This exquisite oil can be experienced in its full glory at our renowned restaurant, Sapori di Spirito Santo.
